Maybe it’s a Cali thing but I grew up eating many-a-7-layer-dip. A typical 7 layer dip (beans, sour cream, salsa and/or tomatoes, guacamole, onion, cheese, olives) is always a hit because it’s delicious, you get to scoop it up with tortilla chips (also delicious), and it feeds a crowd with minimal prep on your part.
Instead of just lightening up the usual dip, I wanted to make something new. Something different. And most of all, something just as delicious that would please my peeps.
Enter Greek 7 Layer Dip.
Typical “Greek” appetizers are usually well received so making them into a layered dip, for a crowd, was a brilliant idea. This delicious dip is layered with hummus, garlic-and-herb-y Greek yogurt, shallots, sweet peppers, Kalamata olives, cucumbers and feta cheese.

Dig into this dip with some multi-grain pita chips and you’re shaking hands with the Greek gods in heaven. All the while, still looking slim in your toga. Yep, it’s that good. It’s healthy. It’s beautiful. And if you bring this to your next get-together, you’ll be the star of the show.

Note: While you prep the ingredients, strain your Greek yogurt in a fine mesh sieve. This helps keep the dip from getting too liquid-y as it sits.
